EZ Chicken

Serves: 4

INGREDIENTS:

  • 1 tbsp. canola oil
  • 1 large onion chopped
  • 2 gloves of garlic finely diced
  • 1 bunch green onions chopped
  • 1 jalapeno diced (wear gloves)
  • 1 red pepper chopped
  • 1 package of ground chicken 
  • 1/2 cup of your favorite salsa
  • 1/2 cup chicken broth
  • salt and pepper to taste
  • *NOTE You can add any leftover vegetable you have in the fridge to this recipe

DIRECTIONS:

  1.  Saute on medium heat the onions, garlic, red pepper, leftover vegies and jalapeno in the canola oil until limp.
  2. Add the ground chicken and saute until cooked through about 5 - 10 minutes.
  3. Add salsa and  broth, cover and simmer on low for 20 minutes.
  4. Serve with white or brown rice as a one dish meal.

NOTES:

This meal is SO easy and SO inexpensive I want to call it the great "kitchen chicken" bailout. You can also serve it with tortillas and sour cream.
