Chicken Burgers

Chicken Burgers

Makes 8 - 4" round burgers.

INGREDIENTS

  • 2 1/2 lbs. of ground chicken. About 2 packages
  • 1/2 cup of bread crumbs
  • 1 large egg
  • 1/3 cup chopped cilantro
  • 1/3 cup chopped parsley
  • 1/2 cup finely chopped red onions
  • 1 clove garlic finely chopped
  • 1/2 tsp. thyme
  • 1/2 tsp. beau monde
  • 1/2 tsp. cumin
  • 1/4 cup or less vegetable or canola oil for frying. Optional if grilling.
  • salt and freshly ground pepper to taste

DIRECTIONS

  1. Combine all ingredients in a large bowl.
  2. Mix all ingredients well with clean hands and form into 4" patties.

FRYING

  1. Heat oil in a heavy saucepan and fry the burgers over medium heat covered.
  2. Cook about 5 minutes per side.
  3. Drain on paper towels.
  4. Serve in a pita pocket or bun of your choice with lettuce, tomato and your favorite sauce or dressing.

GRILLING

  1.  Preheat your grill to high heat.
  2. Use a grill tray to grill the burgers. They are very moist and will have a tendancy to fall apart if you don't.
  3. Turn middle burner to low and leave sideburners on high.
  4. Place burgers on grill rack in the middle over low heat. (Indirect method)
  5. Grill for 10 minutes on each side.
  6. Serve in a pita pocket or bun of your choice with lettuce, tomato and your favorite sauce or dressing.

NOTES

These ground chicken burgers are wonderful and tasty. I like them fried or grilled. We eat them alone without any bread and I'll dollop Cilantro Sauce over mine for added zing. They are low in fat (grilled) and easy to prepare and make and very economical.
