Ramps
Ramps also known as wild leeks are a member of the onion family. They look very similar to scallions/green onions and are often used in lieu of the same. Ramps have white roots, a purplish stem and green leaves that are broader than green onions and very edible. They have a distinctive strong flavor similar to onions and garlic. They grow wild and are native to North America specifically from Canada to the Carolina. Their growing season is late winter to early spring and they are especially popular in the state of West Virginia and the Canadian province of Quebec. As a point of note ramps or the wild leek are a protected species in Quebec. Often considered a delicacy ramps are an adaptable green that can be used in many different kinds of cooking. You can use them in any recipe that calls for onions or leeks, raw or cooked. You will find them in specialty stores and they keep best when stored refrigerated in a plastic for up to a week.
